From Porter to Pastry Chef: Highlands Apprentice Samuel Ayoti Pursues His Culinary Dream
A former kitchen porter has taken a bold step toward his dream of becoming a pastry chef, thanks to the support of an apprenticeship programme at Highlands College.
Samuel Ayoti, originally from Kenya, moved to Jersey shortly after the Covid-19 pandemic. He began his local journey working behind the scenes as a kitchen porter — but it wasn’t long before his potential was spotted.
Encouraged by his then head chef, Samuel enrolled in a professional cookery apprenticeship at Highlands in 2022. Within his first year, he had already made a big impression — being named Best Student Apprentice.
“What I’ve learned here has immensely improved my skills,” Samuel shared. “When I came to the island, I didn’t have much knowledge of cooking… but since coming to Highlands College, I’ve learnt so much and I hope to keep building on that.”
Now working as a Chef de Partie at The Oyster Box, Samuel is completing his Level 3 Professional Practice apprenticeship while continuing to grow in his culinary role.
Chef Lecturer Adrian Goldsborough, who nominated Samuel for his award, praised his dedication. “English is a second language for Samuel, so there were challenges — but he asked questions, was open to learning, and he’s excelled,” he said.
Adrian added that while partnerships with the hospitality industry are strong, there’s room to expand. “We need even more conversation and collaboration to support people through apprenticeships.”
At The Oyster Box, Head Chef Jacky Eon has witnessed Samuel’s growth firsthand. “He’s very good at his job and brings enthusiasm to the kitchen,” Jacky said. “I started as an apprentice too — it’s a fantastic way to train and build careers in hospitality.”
Samuel’s current employer, the JP Restaurant Group, supports his development by giving him a dedicated day each week for college studies.
Now determined to inspire others, Samuel hopes to encourage fellow Islanders, especially newcomers, to explore apprenticeship opportunities. “You need to be committed and flexible to follow your goals and dreams,” he said. “But if you persevere, you’ll enjoy the fruits of your work.”
